Here's my Roasted Carrot Soup! I got the recipe from "Mennonite Girls can Cook" blog spot. I tweaked my recipe slightly. I used about a tbsp of Epicure Louisiana spice, 1 star aniseed and 2 bayleaves. I did make ham broth a few days before and chilled it to skim off the fat so it is very low fat. I used a dollop of sour cream and a few spinkles of parsley for flavour/garnish. What do you think??? It tastes SOOOOO good, I am going to make another batch. And roasting the veggies creates and amazing sweetness. I would think this cook needs a kiss!!
And now for homemade oreo cookies with cream cheese icing.....yum. Enough said.
And next on the list.....tabouli salad with tomatoes, cucubers and mint!!

Hi Mel, I made the soup too. I also tweaked it a bit by using stuff I had. I even put in some canned pumpkin that I had left in the freezer. It's really yummy. So where do I find the taouli salad recipe? Miss you - Love Mom
